Recipe: Marinated Shrimp Skewers With Spinach-Walnut-Feta Cheese Pesto

Today's recipe is for garlic-and-oregano-marinated shrimp skewers with a simple spinach, feta cheese and walnut pesto.
Ingredients:
1 pound of raw, peeled, de-veined shrimp
2 large minced cloves of garlic
2 tsp dried oregano
1 pinch of red pepper flakes
Pesto Ingredients: 4 cups fresh spinach, 1/2 cup crumbled feta cheese, 1/2 cup walnuts, 1 small whole clove of garlic, 1/2 large lemon, several Tbs of olive oil
Procedure:
If you're using wooden skewers, soak them in water a bit ahead of time. Then toss the shrimp with the garlic, dried oregano, red pepper flakes and a few Tbs of olive oil to combine.
Place that bowl right into the fridge and let the shrimp marinate for about a half-hour and use that time to make the pesto.
Put the loose-packed spinach into a food processor and add the crumbled feta cheese, walnuts, small garlic clove and the juice of the 1/2 large lemon. Place the lid on top, turn the machine on and then drizzle a little olive oil into it as needed to make a smooth consistency.
All that is left is to preheat the grill and place 2-3 marinated shrimp onto each skewer. Depending on the size of the shrimp, they will only take 5-6 minutes or maybe 10 minutes tops to cook.
Serve the shrimp skewers up while they are still nice and hot with optional steamed rice on the side and a big dollop of the pesto. Finish with a squeeze of lemon juice on top of everything.
